If you want a classic Italian dish that has all the tradition of Italian cooking, look no further than the simple but timeless gnocchi with gorgonzola (the smaller gnocchetti adapt themselves even better to this dish).
Ingredients include one packet of gnocchi, 150 grams of ’sweet’ gorgonzola (an industrial, softer version than the more mature and tasty style), butter, grated parmesan cheese.

For a different touch: a couple of rocket lettuce leaves, a handful of walnuts, a pinch of pepper.

The method couldn’t be simpler.
When the gnocchi have been cooked in boiling water, tip them into a pan with melted gorgonzola and butter, and mix together.
Add the parmesan cheese and serve very hot.
For some variations, you can mix white and green gnocchi, or add some rocket or walnuts to the gorgonzola.
