Bresaola from Valtellina is air-dried salted beef that needs to be aged for two or three months.
Made from defatted meat, bresaola is now a PGI (protected geographical indication ) and thanks to its unique characteristics, it will keep you going as a fit as a fiddle.
Bresaola can be served in a variety of ways; with extra virgin olive oil and lemon juice/ balsamic vinegar; with mushrooms and celery or, if you wish something more substantial, with rocket salad, black pepper and freshly shaved Parmesan cheese!
