This is a traditional pasta recipe from Italy that many Italians may remember from their childhood, and which should get your family eating mushrooms, even if not the favourite dish.
Ingredients for four people: 300 grams of chopped mushrooms, half a kilo of penne pasta, two packages of smoked pancetta or ham, one glass of wine, a quarter of an onion, salt, oil and pepper.
In a non-stick pan, brown the onion in hot oil, add the chopped mushrooms and when brown, add the wine.
When the wine is nearly completely evaporated, add the pancetta, salt and pepper and cook for about 10-15 minutes.
When the pasta has boiled and is ready, toss the sauce through the pasta, and add some chopped parsley if desired.
