As temperatures are dropping everywhere, a dish of Italian risotto will warm you up and make you feel at peace with the whole world.
Ingredients: rice, sausage, pumpkin, butter, onions, Parmesan cheese, beef or vegetable broth.
Method: 1.
Chop the onion and then cut the pumpkin and sausage into strips.

Brown the onions in a little oil, add the pumpkin or squash and cook for 10 minutes.
At this point add the sausage and pour in a glass of wine (white or red) 3.
Remove sausage, onion and pumpkin from the frying pan and set them aside.

Meanwhile add the butter and fresh chopped onion and let it brown for a few minutes.
Next add the rice, stir gently ,toast for 5 minutes and then pour in the wine.

Once the wine has evaporated pour in the broth and stir the rice around.

When the rice is half done, add the pumpkin and sausage that you set aside and cook for a few minutes more (salt only if necessary).
Remove from the heat, stir the butter into the risotto and sprinkle with Parmesan.
Risottos won’t wait, so serve presto pronto.
