On 2nd June Italy celebrated the 63rd anniversary of the Republic and for the occasion I decided to prepare this delicious risotto called Risotto Tricolore or Tricoloured Rice which thanks to its three different colours reminds one of the Italian flag.
If you are curious to taste it, all you have to do is prepare three different kinds of risotto; the first with tomato sauce, the second with butter and white wine and the third with peas, lettuce and asparaguses.
Once you have cooked the three risottos, place them in a large platter and try to compose the design of a flag.
If you wish, you can also garnish it with leaves and flowers! My recipe is from Steiner Carl0’s bookIl ghiottone lombardo.
