Italian recipes: stuffed squids from Liguria

Summer is almost over, but the following recipe can be served either hot or cold, so there’s no excuse not to get into the kitchen and start cooking.
Ingredients: 1 kg squids; 100 g green olives; 2 tablespoons salted capers; parsley; 2 garlic cloves; tomatoes; oil.
Method: 1.
Cut the small tentacles from the squids.

Steam cook the tentacles and then put them in the food processor with olives, capers, parsley and garlic.

Process until finely chopped and then use the mixture to fill the squids (close each squid with a toothpick .
) 4.
Cut the tomatoes into four pieces and fry in a little oil.
5.
Throw in the stuffed squids, season with chopped parsley and garlic and cook for 45 minutes.
