Inspired by the traditional pesto recipe from Genoa, this spread made with rocket is a delicious soft paste that can be spread on bread or used as a sauce for pasta dishes!Here are the ingredients: 100 g rocket leaves; ½ cup extra virgin oil; ½ cup seed oil; 1 tablespoon pine nuts; 1 tablespoon cashew nuts; 1 small potato; 50 g pecorino cheese; 1 garlic clove; a few drops balsamic vinegar; salt.
Cook the potato in slightly salted water.
