I have just come upon this rather interesting Frico recipe from Friuli; a dish peasants used to prepare with cheese leftovers.
I’m sure you will love it! Actually there are two versions of it, one soft and creamy with Montasio cheese, onions , potatoes, leek and speck or pancetta and the other, crispy and only made of cheese (you can also add a bit of flour).
This simpler version can be served as an appetizer or with polenta, fonduta and mushrooms.
Believe me, it’s very good!
